Komal
Komal, the city’s first craft molino, located at Mercado La Paloma. The shop features ethically sourced heirloom corn from Oaxaca and the state of Mexico, offering fresh tortillas, tostadas, masa by the pound, and a unique menu of masa-based antojitos. Founded by Fátima Júarez and Conrado Rivera, Molino Komal is a testament to community effort, hard work, and the couple’s passion for preserving the art of nixtamalization.
This opening represents a shift in L.A.'s taco culture by highlighting the value of traditional methods and ethically sourced ingredients. Komal Molino's menu includes rare dishes like tlacoyos and molotes de plátano, as well as the “Taco Sonia,” a homage to Júarez’s upbringing in Mexico City. This exciting venture reflects both the rich culinary heritage of Mexican cuisine and the couple's dedication to reinvesting in Mexico’s Indigenous farming communities.
